Palak Paneer/ Saag Paneer Recipe

Hi Everyone!

I am back with a very delicious , low carb and everyone's favorite palak paneer recipe. Many of us in India are not great fans of spinach. As a child I remember I never had spinach cooked with onions without paneer. Similar is the problem every mom out there is facing with her child. As we all know green leafy vegetables are full of vitamins and minerals and so vital for a healthy body. I believe it should be consumed atleast once a week to keep our haemoglobin levels high. There are numerous benefits of consuming spinach which I will be enlisting below. Palak paneer in itself is so flavourful and delicious that it outweighs the bitter taste of spinach and every child loves it because it has paneer in it. Also it is a great recipe for those who are on low carb high protein diet. So people start consuming palak as much as you can. Listed are the benefits of spinach.


Benefits of Spinach/palak:

1)Low in fat and cholesterol. High in Zinc and Protein

2) Contains vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese

3) Important for skin,bone and hair health.

4) Helps in preventing cancer,asthma,diabetes

5) Increase metabolism and improves eye-sight.


Recipe:

Serves 4-5 people

Ingredients

Spinach(2 bunch)

1 onion finely chopped

1 tomato puree

1/2 tsp cumin seeds

1/2 tbsp oil

2 tbsp ghee

1 tbsp ginger,garlic,green chilli paste( if you want spicy)

1 tbsp cumin-corriander powder

1/2 tsp garam masala

1/2 tsp turmeric

1 tsp kitchen king masala

1 tsp red chilli powder

200-275g paneer

Salt to taste




Method:

1) Take a wide pan and fill it with water. Allow water to reach boiling point. Once the water starts to boil add spinach and salt to it.

2) Blanch spinach and turn it upside down until it turns soft but is still light green in color. (Note: Overcooking spinach till it turns dark green will result in bitter taste)

3) Remove spinach from water and wash it under cold water to further remove any remaining impurities.

4) Grind blanched spinach to make its puree.

5) Take a pan and put little bit of oil in it. Toss the paneer in this pan until it turns golden brown and keep it aside once its done.

6) Now use the same pan to make sabji.

7) Add ghee and let it melt. Once ghee melts add cumin seeds and let it crackle. Now add ginger-garlic-green chilli paste and saute it for a minute.

8) Add onions and saute it till it turns golden brown. Now add tomato puree and saute it for 5-7 minutes. Add cumin corriander powder, turmeric,red chilli,garam masala, kitchen king masala and let it saute for another 5 minutes. (Note: Saute everything on low flame . This will make your recipe more delicious as well as preserve nutrients)

9) Once onion and tomato is cooked add spinach puree and water to it. Mix well and let it cook for 10 minutes.( Note: Adding tomato is optional but tomato if added will remove the bitterness of spinach as well as replace the need of lemon)

10) Now add cream to it and mix it. ( Cream is optional but adding it will definitely enhance taste)

11) Finally add paneer pieces to the cooked curry. Stir well and drizzle some cream on it.

12) Serve it with parathas,sliced onions and lemon.

"For those on keto diet you can omit tomato and add lemon instead. Also you can replace oil with butter for sauteing paneer. "
