Ras Malai Recipe

Who doesn't love dessert? Well most of us do. And that's the reason why today I am bringing you an authentic Indian dessert made out of cottage cheese and milk that will ultimately satisfy your sweet tooth. Ras malai as the name suggests is a combo of ras i.e Basundi(milk) and malai(cream/cottage cheese). So,let's not waste time and quickly prepare this yummy dessert from an Indian subcontinent.



Recipe:

Ingredients:

Milk: 10 cups

Vinegar: 1 tbsp

Sugar: 2 cups

Cardamom/Elaichi powder: 3 tbsp

Pistachio: Handful

Almonds: Handful

Saffron water/Kesar

Water



Method:

For Chenna/ Malai balls:

1)Boil 5 cups of milk in a pan. Bring it to boil and then add vinegar or 1/2 lemon juice to milk.

2) Pour curdled milk into a strainer or cheese cloth to remove excess water. Take all the chenna and roll it into a ball . Press it between your palms to remove excess water.

3) Knead this ball for 5-10 minutes until it turns into a soft dough. Divide the dough into small balls such that there remains no cracks in the balls.

4) Now take a pan and add 1 cup of sugar with 1 and 1/4 cup of water . You can also add 1 tsp of elaichi/cardamom powder to this mixture. Bring this mixture to boil.

5) Now add the prepared balls to the above mixture. Cover pan and let it simmer for 6-8 mins.

6) Once done slowly remove balls from the pan and put it aside into a bowl of chilled water and let it set.

For Rabdi:

1) Take 5 cups of milk to which add 3/4 cup sugar and 1 tbsp of elaichi powder and 5-6 strands of kesar. Bring this mixture to boil several times until it thickens thrice its original consistency. Keep stirring the mixture so that milk doesn't stick to the pan.

2) Once the rabdi is prepared let it cool for 1-2 hours and then you can add prepared balls to the rabdi and garnish it with dry fruits.

3) Put this into refrigerator for 3-4 hours and serve it chill.
