Sooji sheera is an Indian dessert made out of semolina and often offered to god as "prasad" on various auspicious occasion. At some indian homes this is only made on auspicious ocassion while other have it regularly once or twice in a month with their meal. Its easy to make and also counts as comfort food. Apart from impressing taste buds it has various health benefits. Sooji is rich in potassium, fibre, iron. It is good for heart, digestion, weight loss and diabetes.

So let's make some sooji halwa today.

Ingredients:

1 cup of semolina/rava/sooji

1/2 cup ghee/clarified butter

3 cup milk

1/2 cup sugar

1 tbsp cardamom/elaichi powder

1/4 cup cashew, almond, pistachio, raisin, kesar(you can add all or some of it)

Recipe:

  1. Heat pan and once the pan is hot add ghee to it . Once ghee melts add semolina/sooji and keep stirring it until sooji turns golden brown and gives out aroma.

  2. While you are roasting sooji on other side start boiling milk in a separate pan and boil it till it reaches its boiling point.

  3. Add cardamom powder and mixed dry fruits to sooji and stir well.

  4. After the milk has boiled slowly add milk to the sooji mixture. Do this carefully as the mixture may splatter and spill out on you.

  5. Add sugar and keep stirring the mixture until the halwa leaves pan or your spatula comes out clean.

  6. Garnish it with cardamom powder and dry fruits.
